With sweet rice pudding being a traditional meal of many countries. You might know it as ”Aroz con leche”, or as I know it ”Riža na mlijeku”. On the other hand, if this is the first time you’re hearing about it, you’re in for a treat.
This fitness recipe was my re-creation of a traditional Croatian dish, modified to be equally delicious and nutritious.
Basically what this meal was missing before was lack of protein and excess added sugars. However, with this recipe, you can enjoy your favorite childhood meal again. Personally, I find coconut and vanilla to combine extremely well with this combination. In case you have some other preferences or a different protein powder flavor, feel free to make those changes.
Ingredients
For the mix
80g rice
650ml coconut milk (or almond milk)
1 row of white chocolate
1 tbsp. vanilla extract
2 tbsp. stevia
60g shredded coconut
1 ½ scoop vanilla whey protein
Topping Ideas
shredded coconut
chopped almonds
small slices of mango
Instructions
As a matter of preference, you can enjoy this meal as a snack, breakfast, or dinner. It can be served hot or cold. Make sure to refrigerate any extras.
Make sure to keep an eye on not burning your milk, as that can really make a mess.
Boil the rice in water for three minutes, then drain it.
Pour the milk into a medium saucepan and add all the ingredients, except for rice. Stir until all the ingredients melt completely.
Once the milk boils, add previously prepared rice and cook over medium heat. Wait for the rice to absorb the milk without stirring.
Serve hot or cold. Sprinkle toppings of your choice (shredded coconut or chopped almonds).
